7 Year Bourbon Whiskey
This ultra limited 4-barrel blend includes 7, 8 and 9 year old barrels - the oldest offering we’ve ever bottled. Vinepair recently included this in their article titled “The One Whiskey You Should Bring Home from Every State.”
This will be available exclusively online and at our Visitors Center beginning at 4:30 PM on Friday, July 10th.
Nose: warm baking spices shine through with toasted oak, banana pudding, and a hint of cornbread.
Palate: chewy with chocolate covered macarons and lush toasted oak.
Finish: long and warming, with more wood spice, banana, cornbread.
Cask Finished Series - CIGAR BLEND
With our Cask Finished Series, we take barrels of our bourbon or rye that have aged for at a minimum of 4 years and then finish them in a unique cask. We do a yearly release of Bourbon Whiskey finished in Maple Syrup Casks and have done different wine barrel finishes, toasted oak barrel finishes, and we have even more to come!
Our newest release - CIGAR BLEND - CASK FINISHED SERIES #17 - is available in store and online now.
Our Master Distiller Rob loved the PX Sherry base of last year's release and built upon it further with a new variety of fruit-forward, rich, and indulgent casks. Oloroso Sherry joins the mix, alongside Tawny Port, Madeira, and Apple Brandy. Bigger, bolder, and slightly sweeter than the 2025 bottling, this is still a full-bodies sipper perfect for cigar night on the patio.
There's a lot to unpack on the densely layered nose, with spice cake, figs, stewed plums, baked apples, caramel sauce, and a delicate layer of vanilla. Mouth-coating and chewy on the palate, baking spice emerges initially before being tempered by a rich nuttiness, flamed orange peels, maple, and dates. Oak and spice build in the finish, but are always balanced by the layers of dark dried fruits, sweet caramel, brioche, and toasted oak.

This bourbon features a blend of our Bloody Butcher Corn (RED), Cocke's Prolific Corn (WHITE) and Blue Popcorn (BLUE). See what we did there? Even cooler - we sourced the white Cocke's Prolific heirloom seed directly from Thomas Jefferson's Monticello Estate, and then grew it on our farm six years ago.
In other words, some of this bourbon came from corn that is a direct descendent of corn grown by one of our Founding Fathers 250 years ago. This is truly history in a bottle.
We have bottled 1776 bottles, and each bottle will be individually numbered.
Available at our Visitors Center at 4:30 PM on May 22nd, with limited retail partners in the days after that.

Artisan Series - Oaxacan Green Corn

Our newest Artisan Series release is made from Oaxacan Green Corn. This has been aged for a minimum of four years, and is 97-proof. Oaxacan Green Bourbon has a rich and elegantly layered nose of praline pecans, toasted oak, caramelized figs, and a bright pop of peach.
The palate brings waves of vanilla buttercream, toffee, and a gentle build of warm baking spices.
The finish is full and lightly sweet with honeyed cornbread, orange zest, and rich caramel corn.
Mash bill: 75% Oaxacan Green Corn, 15% soft red winter wheat, 10% malted barley.

Straight Bourbon Whiskey
Our straight bourbon is aged at least 4 years and contains wheat as a secondary grain which helps create a softer, more rounded spirit. It has earned several medals at international tasting competitions. This stuff is good.
Mash bill: 75% corn, 15% soft red winter wheat, 10% malted barley.
Bottled in Bond Bourbon
Our new flagship is aged at least 5 years, comes from 53 gallon barrels and is 100 proof. Binny’s Beverage Depot describes it as “vanilla drizzled caramel corn that greets the nose with a background of cinnamon and nutty oak. A thick and coating palate highlights the sweet caramel corn and moves towards ripe apples and lightly toasted coconut. The finish is long and soft with sweet red berries fading into peppery spice. A new standard for craft bourbon.” Double Gold winner at the 2021 San Francisco World Spirits Competition.”

Straight Rye Whiskey
This "high" rye (75% rye) is aged at least 4 years and is for those of you who prefer your whiskey with a bit of a spice. We grow and distill a very specific varietal of rye that has a very soft white pepper finish. When complimented with the vanilla and butterscotch notes that come from the corn, it’s no wonder it was named the “Best Whiskey of the State” in IL at the Heartland Spirits Competition.
Mash bill: 75% rye and 25% corn.
Bottled-in-Bond Rye
This 4-5 yr bonded whiskey is an older, higher proof expression of our Straight Rye. Made entirely from our 2016 rye crop, this has tons of vanilla and butterscotch on the nose; a creamy mouthfeel with baking spices, brown sugar and a slight hint of dill. You'll enjoy a very long finish with just a touch of white pepper. It's a "bourbon drinker's rye." Double Gold winner at the 2021 San Francisco World Spirits Competition.”

Artisan Series - Blue Popcorn Bourbon
Yes, it’s made from Blue Popcorn. This four-year, 97-proof offering showcases aromas that take you to a movie theater. Caramel apple, toffee popcorn and fruit candies compliment the rich, warm oak and vanilla notes that finishes with complex wood spice.

Artisan Series - Bloody Butcher Bourbon
This special series is made with dark red Bloody Butcher Corn. This has been aged for a minimum of four years, and is 97-proof. With each sip, immerse yourself in the essence of our heritage grain. Delight in the notes of apple tarts, crème brûlée, and cornbread on your palate. Finishing with a harmonious blend of wood spice, warm pastries, and subtle banana caramels, this whiskey takes you on a journey through the history of our farm.

Vodka
Our vodka is often called a “bourbon drinker’s vodka” because it has some flavor and character. Made of 100% corn raised right here on the farm, it is smooth, butterscotch forward and refreshingly different. Every day we have customers tell us it is one of the best vodkas they've ever tasted. It's been awarded a gold medal at the Denver International Spirits Competition, a silver medal at the San Francisco World Spirits Competition, and a bronze medal at the American Craft Spirits Tasting Competition.
