Straight Bourbon Whiskey

Our straight bourbon is aged at least 4 years and contains wheat as a secondary grain which helps create a softer, more rounded spirit. It has earned several medals at international tasting competitions. This stuff is good.

Mash bill: 75% corn, 15% soft red winter wheat, 10% malted barley.

Bottled in Bond Bourbon

Our new flagship is aged at least 5 years, comes from 53 gallon barrels and is 100 proof. Binny’s Beverage Depot describes it as “vanilla drizzled caramel corn that greets the nose with a background of cinnamon and nutty oak. A thick and coating palate highlights the sweet caramel corn and moves towards ripe apples and lightly toasted coconut. The finish is long and soft with sweet red berries fading into peppery spice. A new standard for craft bourbon.” Double Gold winner at the 2021 San Francisco World Spirits Competition.”

Mash bill: 75% corn, 15% soft red winter wheat, 10% malted barley.

7 Year Bourbon Whiskey

This is currently our oldest age stated product. We take our straight bourbon whiskey and let it mature for a few more years. The oak and vanilla from the barrel really shine through. Rob, our distiller, says it’s like eating a macaroon in a cornfield!

Mash bill: 75% corn, 15% soft red winter wheat, 10% malted barley.

Straight Rye Whiskey

This "high" rye (75% rye) is aged at least 3 years and is for those of you who prefer your whiskey with a bit of a spice. We grow and distill a very specific varietal of rye that gives has a very soft white pepper finish. When complimented with the vanilla and butterscotch notes that come from the corn, it’s no wonder it was named the 2019 “Best Whiskey of the State” in IL at the Heartland Spirits Competition.

Mash bill: 75% rye and 25% corn.

Bottled-in-Bond Rye

This 4-5 yr bonded whiskey is an older, higher proof expression of our Straight Rye. Made entirely from our 2016 rye crop, this has tons of vanilla and butterscotch on the nose; a creamy mouthfeel with baking spices, brown sugar and a slight hint of dill. You'll enjoy a very long finish with just a touch of white pepper. It's a "bourbon drinker's rye." Double Gold winner at the 2021 San Francisco World Spirits Competition.”

Artisan Series - Blue Popcorn Bourbon

Yes, it’s made from Blue Popcorn. This four-year, 97-proof offering showcases aromas that take you to a movie theater. Caramel apple, toffee popcorn and fruit candies compliment the rich, warm oak and vanilla notes that finishes with complex wood spice.

Mash bill: 75% blue popcorn, 15% soft red winter wheat, 10% malted barley.

Artisan Series - Bloody Butcher Bourbon

This special series is made with dark red Bloody Butcher Corn. This has been aged for a minimum of four years, and is 97-proof. With each sip, immerse yourself in the essence of our heritage grain. Delight in the notes of apple tarts, crème brûlée, and cornbread on your palate. Finishing with a harmonious blend of wood spice, warm pastries, and subtle banana caramels, this whiskey takes you on a journey through the history of our farm.

Mash bill: 75% bloody butcher corn, 15% soft red winter wheat, 10% malted barley.

Cask Finished Series

With our new Cask Finished Series, we take barrels of our bourbon or rye that have aged for at a minimum of 4 years and then finish them in a unique cask. We do a yearly release of Bourbon Whiskey finished in Maple Syrup Casks and have done different wine barrel finishes, toasted oak barrel finishes, and we have even more to come!

Vodka

Our vodka is often called a “bourbon drinker’s vodka” because it has some flavor and character. Made of 100% corn raised right here on the farm, it is smooth, butterscotch forward and refreshingly different. Every day we have customers tell us it is one of the best vodkas they've ever tasted. It's been awarded a gold medal at the Denver International Spirits Competition, a silver medal at the San Francisco World Spirits Competition, and a bronze medal at the American Craft Spirits Tasting Competition.

Artisan Series:  Our Artisan Series reflects years of trial and error, patience and passion. We grow rare, heirloom and specialty varieties of corn and distill them into truly unique offerings that showcase the flavor nuances of corn varieties.

May we suggest these cocktails:

BOURBON SLUSH - PARTY TIME!!!

9 cups water, divided

3 black tea bags

2 cups sugar

2 cans of frozen lemonade concentrate

1 can of frozen orange juice concentrate

2 cups of Whiskey Acres Bourbon

Ginger Ale for a splash finish

In a small saucepan, bring 2 cups of water to boil. Add tea bags and allow to seep for 10 minutes. Discard teabags. Stir in sugar until completely dissolved. 

In large container, combine tea/sugar mixture, lemon and orange juice concentrates, water and bourbon

Pour into a flat tupperware container and freeze for 4-6 hours, or over night if possible.

Serve using an ice cream scoop.  Top with a splash of ginger ale. 

 

BOURBON MILK PUNCH

1.75 oz Whiskey Acres Bourbon

4 oz Whole Milk

Tbsp of Maple Syrup

Tsp of Vanilla extract

Add all ingredients into cocktail shaker and shake well.

Pour over ice and top with cinnamon and nutmeg.

 

BARN DOOR

2-oz. Whiskey Acres RYE Whiskey

.5-oz. Grenadine

4-5-oz. Ginger Ale

2-3 dashes of ORANGE BITTERS

Combine ingredients over ice in rocks glass. Stir. Serve with maraschino cherry and/or orange wheel.

 BOURBON N BLUES

2-oz. Whiskey Acres Straight Bourbon

6-oz. Lemonade (use the good stuff)

Tbsp of Blueberry Syrup

Blueberries for garnish

Fill glass with ice and add the bourbon. Swirl in the blueberry syrup. Add lemonade. Stir will. Garnish with blueberries.

OLD FASHIONED

2-oz. Whiskey Acres Bourbon or RYE

.5-oz. simple syrup

1 brandied cherry

1 orange wedge

2 dashes of angostura bitters

In a mixing glass; muddle cherry, orange wedge and bitters. Add simple syrup and Whiskey. Fill glass ¾ of the way with ice and stir until chilled. Pour into rocks glass. 

MIDWEST MULE

2-oz. Whiskey Acres Bourbon

.5-oz. lime juice

4-5 oz. ginger beer

In a cocktail shaker, add Whiskey Acres Bourbon and lime juice. Quickly shake over ice and then add the ginger beer to incorporate all flavors. If topping off the drink, it will be layered and not balanced. Pour over ice in a Collins glass and garnish with a lime wheel.
